Interaction vs Incident

I am a noob and we have just started using Service Center...can someone help me understand when I should use an interaction vs an incident?

Thanks for the info Pike....I hadn't realized ServiceCenter and ServiceDesk where different.

ServiceCenter now uses the term "interactions" instead of "service calls".

I also now found a ServiceCenter forum that I will post in since that is the correct place for my question.
