There is a way to do this, but hidden very well within Outlook.
Rightclick the Outlook toolbar to Customize.
Select the button you want to change and rightclick to:
1) Change the name by putting & in front of the letter you want to associate (like &Catalogue to underline the C in the menu text)
2) show both Image and Text
Now you can use ALT-C to Catalogue.
Just make sure you're using an available letter that's not already used in your menu or toolbars.
That allowed me to assigfn keyboard shortcuts to the icons in the main Outlook screen.
Is there a way to do this the icons available in an open message?
Just found my own solution (by clicking ALT with everything)
After opening a new message; ALT+X will take you to the TRIM Add-ins screen (in 184.108.40.2060) the A will launch the Attach Record option.
I just tested with 220.127.116.112 and it's ALT+Y then A
